Easy chicken freekeh recipes

This luxurious freekeh dish combines earthy grains, creamy sauce, and savory chicken, all baked to perfection with a golden Parmesan crust. It’s the ultimate comfort meal!


Ingredients:

  • 250g freekeh (washed and soaked)
  • 700ml cooking cream
  • 1 onion, finely chopped
  • 100g fresh mushrooms, chopped
  • 1 chicken bouillon cube
  • ½ tsp salt
  • ½ tsp ground ginger
  • ½ tsp black pepper
  • 2 chicken breasts (fillets, diced and seasoned to taste)
  • 1½ cups Parmesan cheese, grated

Instructions:

  1. Prepare the Base:
    • Sauté the onions in a little oil until soft. Add the mushrooms and cook for a few minutes.
    • Stir in the spices (salt, ginger, and black pepper), the chicken bouillon cube, and a splash of water. Mix well.
  2. Cook the Freekeh:
    • Add the freekeh to the pan and pour in enough water to cover it slightly. Cover and simmer for 10 minutes, allowing the water to be absorbed.
  3. Cook the Chicken:
    • In a separate skillet, sear the seasoned chicken over high heat until golden and fully cooked.
  4. Assemble the Dish:
    • Mix 1 cup of Parmesan cheese and the cooking cream into the cooked freekeh. Transfer the mixture to a baking dish.
    • Top with the remaining ½ cup of Parmesan cheese and the cooked chicken.
  5. Bake:
    • Place the dish in a preheated oven at 180°C (350°F) for 10 minutes, or until the top is golden and bubbly.
